Two things Nigerians eat separately, served together on purpose. Gizzard is cleaned, cooked down until tender then fried and tossed with sweet fried plantain, onion and pepper. It is a bar snack in Lagos and it works exactly the same way here.
Gizzard needs patience. It goes tough if it is fried from raw, so ours is simmered first until it is tender, then fried to get colour and bite on the outside. Only after that does it meet the pepper mix and the plantain.
The plantain is not filler — the sweetness is what makes the combination work against the pepper and the savoury gizzard. It is the plate we recommend most often to people who want something to pick at over a drink rather than a full meal.
