Ripe plantain, sliced thick and fried until the outside caramelises and the inside turns custard soft. Nigerians call it dodo, and it is the side dish that quietly steals the plate — naturally sweet, entirely plant-based, and the perfect partner to anything peppery.
Good dodo depends almost entirely on timing. The plantain has to be ripe enough for its natural sugars to caramelise, but firm enough to hold its shape in the pan. We select and slice ours to that window, then fry in small batches so each piece comes out deep gold outside and tender inside rather than greasy or dry.
In Nigerian homes dodo appears at breakfast, lunch and dinner without anyone questioning it, and our Edmonton guests have adopted the same habit. It is the easiest introduction to West African food on the menu — no heat, no unfamiliar spice, just sweet fried plantain that goes with everything.
