Jollof is a one-pot dish, which means there is nowhere to hide. The base of blended tomato, red pepper, onion and scotch bonnet has to be reduced properly before the rice goes in, and the pot has to be left alone long enough for the bottom layer to catch. That controlled catch is where the smoke comes from.
We cook ours in batches through the day rather than holding one pot from open to close, so the rice you get has not been sitting under heat for hours. Grains stay separate, the colour stays deep, and the pepper sits behind the tomato instead of overwhelming it.
