The burger the restaurant is named for on a hot day. Marinated chicken fried to a hard golden crust, tossed in our West African pepper sauce, then stacked in a soft toasted bun with fresh toppings and a side of fries. It is genuinely hot — that is the point.
The heat here is built in layers rather than dumped on at the end. The chicken is marinated before it is battered, so the seasoning is inside the meat as well as on the crust. After frying it goes straight into the pepper sauce while it is still hot, which lets the sauce soak into the coating instead of sliding off it.
It comes with fries and a dipping sauce, which are not an afterthought — you will want something starchy alongside. Guests who want the flavour without the full heat can ask us to go lighter on the sauce.
